Cuidado. He lurks in the shadows, waiting in bold anticipation. He’s surprisingly bitter. Bitter about something. Legend has it that he feasts on those with fresh hops coursing through their veins. This dry hopped, Texas IPA has a flavor as defiant as the Hopadillo himself. It’s packed with the bracing bitterness of hops from around the world that this creature craves. He’s comin’ to get ya. You’ve been warned.
Clear dark amber in color with a fruit bomb nose, but not of straight citra hops. On the palate all we get is fruit and then the bittering hops kick in. This beer is almost there. It’s a bit of fresh air compared to the fruit bomb IPAs we have tried lately. We are at odds as to what is lacking, though just slightly: Fr. Jack thinks it needs just a tad more malt while Large Marge believes it needs a bit more bittering hops. Looking forward to trying other beers from this brewery.
